When the grapes reach physiological ripeness towards the end of August, hand-picked and sorted to eliminate the least ripe bunches. Cold soft crushing in an environment saturated with N2, slow cold fermentation for 20 days. Carried out using specially selected yeasts. Refermentation takes about 25 days. Ths is followed by a further period of 1 months during which the fermentative lees are kept suspended; this procedure, called the Charmat method, gives the sparkling wine its characteristic fragrance, as well as ensuring the fieness and persistence of its bubbles.
Straw yellow with greenish highlights, very fie and persistent perlag. Intensely herbal and fruit fragrance, elegant and persistent. Soft, non-intrusive, exalts the structure while maintaining optimum freshness and drinkability.
Excellent as an aperitif and with appetizers based on cold cuts.

It maintains its aromatic characteristics fresh for 1-2 years; like all wines it must be kept in a cool place (under 18°C) and not exposed to direct sunlight or to strong extremes of heat.
